LUE: Baking
Aug. 12th, 2024 06:25 pmToday I made my mom's recipe for muffins for Eyal. He loved them. So, with Mom's permission, I am sharing the recipe. It's dead easy.
Choc-Chip Muffins
Ingredients
2 cups flour
1/2 cup sugar
1/2 tsp. salt
2 tsp. baking powder
3/4 cup milk
1/2 cup (115 g) butter, melted
2 eggs, room temperature
1 cup semisweet chocolate chips
1/2 cup cocoa (optional)
Method
1. Preheat oven to 375 F/190 C.
2. Combine dry ingredients: flour, sugar, salt, baking powder.
3. Comhine wet ingredients (milk, eggs, butter) separately.
4. Add wet ingredients to dry; mix until just combined.
5. Add chocolate chips; mix. Don't overmix; batter should be lumpy.
6. Spoon batter into twelve muffin cups in muffin tin.
7. Bake 20-25 minutes until toothpick inserted comes out with moist crumbs.
8. Let cool for 30 minutes.
NB: If you want to make double chocolate muffins, add the 1/2 cup cocoa to the dry ingredients.
